Sweet Potato Soufflé
A family favorite in the Levy household, this recipe was handed down to Jen by her mom.
Another holiday recipe from the Blessinsg4Ever family, today we are sharing a family favorite in the Levy household - sweet potato soufflé. This recipe was handed down to Jen Levy, our Chief Strategy Officer, from her mom. Anybody else getting hungry just by thinking about it?
Preparation time: 30 minutes
Baking time: 45 minutes
Yields 6-8 servings
5 medium yams, boiled and peeled
1/2 cup of butter
1 1/2 cups sugar
1/4 teaspoon salt
2 teaspoons of vanilla
1 cup of pecans, chopped
1/2 cup cooking sherry
1/2 cup miniature marshmallows (optional)
Preheat oven to 350 degrees Fahrenheit. Mash yams in large bowl with mixer. Add butter, sugar, salt, and vanilla. Beat until well mixed. Add pecan pieces and sherry. Mix well. Pour into greased casserole dish. Bake 45 minutes. Just before soufflé is done, top with optional marshmallows and brown.
